I’m always on the lookout for a tasty, sweet snack that won’t take its toll on my health, weight and skin. I decided to experiment with my favorite baking flour (almond meal) and see if I could drum up a superfood “bite” that’s both chocolatey and great for your skin. And these amazing Beauty Brownie Bites are it!! They’re soft, they’re sweet, they’re super healthy, and, most importantly, the dip perfectly into a warm cup of afternoon tea – heaven!!
Even living a fully plant-based lifestyle, I still love a healthy, sweet treat. I developed this recipe as I stood in my kitchen craving something sweet, bready, and delicious to go with my afternoon cup of tea. Yes, this recipe is absolutely a treat, but it’s a healthy one for sure. Trust me, you’ll have to hide these beauties so your family won’t gobble them up!
Yields about 20 mini muffins
Beauty Brownie Bites Ingredients
- 1 1/2 cups almond meal
- 1/2 cup cacao powder
- 1/4 cup cacao nibs
- 1/4tsp baking powder
- Pinch of salt
- 8 pitted dates
- 1tsp vanilla essence
- 3/4 cup of coconut oil (melted)
- 3 eggs (or equivalent in egg replacer)
DIRECTIONS
- Pre-heat oven to 350 degrees F
- Place all the ingredients in a food processor and process until almost smooth. Don’t over-process because you want the nibs to stay intact.
- Using a teaspoon, spoon the mixture into either muffin cups or a greased mini-muffin pan.
- Bake for 11 minutes.
- Remove and allow to cool on a wire tray. You can easily freeze them if you’re not going to eat them right away.
