Okay – these are moist, sweet and such a delicious treat, you will hardly believe they are so healthy. They are sugar free, gluten free, and dairy free, too – actually almost sugar free
Ingredients:
- 1/2 cup Nutiva coconut oil
- 1/4 cup Xylitol
- 2 eggs, beaten
- 1/4 cup coconut milk
- 3 very ripe bananas, mashed
- 2 cups almond meal
- 1 cup gluten-free all purpose flour
- 1 tsp baking powder
- 1/2 tsp sea salt
- 1/2 cup Lake Champion Chocolate Chips
Instructions:
- Pre-heat oven to 350 degrees
- In a stand mixer, mix the coconut oil and Xylitol until creamy.
- Slowly add the egg
- With the mixer still mixing, add the coconut milk and bananas.
- Mix the dry ingredients in a separate bowl.
- Add dry ingredients to mixer, while set on low.
- Remove mixer bowl from stand and fold in the chocolate chips.
- Spoon the mixture into muffin cups.
- Bake for 25 minutes, or until toothpick comes out clean.
