Banana Chocolate Muffins

Okay – these are moist, sweet and such a delicious treat, you will hardly believe they are so healthy. They are sugar free, gluten free, and dairy free, too – actually almost sugar free

Ingredients:

  • 1/2 cup Nutiva coconut oil
  • 1/4 cup Xylitol
  • 2 eggs, beaten
  • 1/4 cup coconut milk
  • 3 very ripe bananas, mashed
  • 2 cups almond meal
  • 1 cup gluten-free all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp sea salt
  • 1/2 cup Lake Champion Chocolate Chips

 

Instructions:

  1. Pre-heat oven to 350 degrees
  2. In a stand mixer, mix the coconut oil and Xylitol until creamy.
  3. Slowly add the egg
  4. With the mixer still mixing, add the coconut milk and bananas.
  5. Mix the dry ingredients in a separate bowl.
  6. Add dry ingredients to mixer, while set on low.
  7. Remove mixer bowl from stand and fold in the chocolate chips.
  8. Spoon the mixture into muffin cups.
  9. Bake for 25 minutes, or until toothpick comes out clean.
