A lot of you have asked me if I can create a smoothie for diabetics, or those who are insulin-resistant. Although I am not a doctor (and always check with your doc first before trying something new), as a holistic nutritionist, clients have found blood sugars stabilize with my easy green smoothie.

Now obviously, because we are not dealing with a sugar-laden drink here, it’s not going to taste as sweet as some other smoothies, but it’s still delicious. And, the thing I love about it is that it’s not too “green” tasting (as in intense). The flax thickens it up, so don’t let it stand for too long! But the flax not only gives you a nice Omega 3 fatty acid boost, but it also gives you a ton of fiber, and leaves you feeling really full.

You can always add a scoop of protein powder if you are doing some hard-core exercise, but make sure your powder is plant-based and unsweetened. If you add protein powder, you may need to add a little more coconut water.

I’ve added some optional fresh mint, which is entirely up to you. I love a minty taste every now and again (not always).

Ingredients

  • 1 handful baby spinach or kale leaves
  • 1 cup chopped organic cucumber, unpeeled
  • 1 cup chopped celery
  • 1 apple, cored and chopped, unpeeled
  • 1 tbsp flax seeds
  • 6-8 ounces  coconut water
  • 1/2 cup crushed ice
  • Squeeze fresh lemon juice
  • A few fresh mint leaves (optional)
  • A few blueberries to garnish (optional)

Instructions

  1. Blend everything up in your high-speed blender.
  2. Enjoy your delicious smoothie!
