Oatmeal & Cranberry Cookies With Crunchy Walnuts

8 tbsp vegan butter

1/2 cup coconut palm sugar

1 tbsp brown rice syrup

1 tbsp unsulphured molasses

1 tsp vanilla extract

1 & 1/2 cups organic rolled oats

1 cup of spelt flour

1tsp baking powder

1 pinch salt

1 tsp Ceylon cinnamon

2 tbsp soy milk (or preferred plant-based milk)

1/2 cup chopped walnuts

1/2 cup dried cranberries

 

Instructions

Place the butter, sugar and syrup in the bowl of a stand mixer, and beat until smooth.

Add the remaining ingredients.
