Purple Sweet Potato Fries

Okay, the reason why I created Purple Sweet Potato fries is because the purple sweet potato (as opposed to the orange one), has been found to have more anti-cancer compounds than any other kind of potato. I have tried mashing purple sweet potatoes and didn’t love the texture because it’s less watery and moist than other potatoes, so I needed to add a bunch of liquid. Hmmmm – how could I use them to good purpose? So, I thought I’d experiment with fries (cos I LOVE sweet potato fries), and they were a huge success. I actually couldn’t stop eating them, so my family didn’t even get to try them!

You might get lucky finding a purple sweet potato at your local grocery store. I was lucky enough to find them at 2 stores here in Los Angeles. If not, ask your local grocery store if they can source some purple sweet potatoes for you.

And for Pete’s sake DON’T worry about calories. Starches are healthy, and particularly in the form of sweet and purple potatoes. They are choc full of health-giving nutrients.

Ingredients

(Serves 2 as a side dish)

1 large purple sweet potato, washed

Avocado or grape seed oil spray

1/2 tsp garlic powder

1/4 tsp smoked paprika

Black pepper and sea salt to taste

Instructions

Pre-heat oven to 400 degrees F, or turn on air-fryer to high heat (and set for 20 minutes)

Cut the potatoes into thin wedges (about 1/2 inch wide and 2-3 inches long) Keep the skin on!

Boil in salted water for about 3 minutes or until fork-tender. Be careful not to over boil them as they easily fall apart.

Drain and pat dry

Place in a large bowl, and spray generously with oil

Season and use tongs to carefully turn chips to make sure both sides are coated.

Place fries in one layer on a greased baking sheet, or in the air-fryer basket. Note that I used an air-fryer, so had to do mine in 2 batches.

Place in the oven for about 20 minutes, or until fries are slightly browned and crispy. Or place in the air-fryer for 20 – 30 minutes. I did find that they took a little longer than regular sweet potato fries.
