We’re now in full-swing apple season, and I am making the most of it. Organic apples are finally affordable and quite delicious. I prefer Granny Smith apples for cooking because they are slightly tart, so impart an excellent flavor to anything sweet.
Remember not to peel your apples because most of the goodness is in the skin. I use one apple for 2 servings, and I cook half of it into the oatmeal, and chop the other half on top.
I have included Matcha, which is a green tea. It’s the whole leaf, which is powdered. It’s extremely high in antioxidants, and can help boost your metabolism.
I also included flax and walnuts so that you get your full compliment of Omega-3 fatty acids.
The dates are full of minerals and fiber and will give you all the sweet you need.
1.5 cups old fashioned organic rolled oats
1 tsp Matcha powder
1.5 – 2 cups of filtered water
1 large Granny Smith apple, cubed
2 tsp ground flax
Tiny pinch of Himalayan sea salt
1/2 cup almond milk (ideally homemade)
4 pitted dates, chopped
1/4 cup toasted walnuts
Place oats in a heavy saucepan. Sieve the matcha powder on top of the oatmeal (to prevent clumping).
Add half of the apple cubes
Add water and simmer for 3- 5 minutes, stirring continuously
Stir in salt and flax
Spoon into bowl, and mix in almond milk to make it creamy
Top with dates, walnuts, the remaining apple, and a sprinkle of cinnamon
